Unified Ferments Wen Shan Bao Zhong

Wen Shan Bao Zhong is the most straight-forwardly delicious of the Unified Ferments line up. It's a lightly oxidized Oolong tea from Taiwan with just enough sweetness, bubbles, and sourness to make it super complex. The tea really shines through here. 

The fermentation adds just enough acidity and structure to make it feel like a serious white wine in the glass without pretending to be one. It's hard to make an easy wine comparison here, and that's fine. It's a uniquely terroir-driven fermented tea of extremely high quality. I'd so much rather drink this than a mass produced de-alc wine. 

Pair it with fresh oysters, sheep's milk cheese, sashimi, or anything where a great white Burgundy would be your first instinct. Serve cold, in a proper glass, and don't be surprised when the bottle disappears faster than the white wines on the table.
