Built on twelve organic teas brewed individually at different temperatures and blended into one bottle, it's the most classically structured of the three. Citrus and green apple on the nose with a mineral quality that reads almost like Chablis, then lemongrass and orange peel on the palate with a long clean Darjeeling finish. The tea is present but never the point — it's just doing the work that makes this drink like a very good white wine.

Pair it with oysters, fish, seafood, or caviar if you're feeling ambitious. Also the right call for a toast when you want something that looks and behaves exactly like Champagne without being it.
